Gently combine ground beef, salt, pepper, buttermilk, and Panko. Divide into 4 sections. Take amount for patty in hand, remove 1/3 of it and set aside. Flatten remaining portion into burger shape. Top with diced jalapeno and cheddar. Flatten small piece and fit over larger portion: pinch shut so no seam is showing and filling is on inside. Repeat to make rest of burgers. Refrigerate until firm. Grill, turning only once and not smushing.
**Can be made in advance, frozen, then thawed to cook and serve!
