1. In a medium saucepan, melt butter over medium heat. Add onion and saute until tender. Add brown sugar, jalapenos (with juice) and mustard. Stir and cook until bubbling. Reduce heat slightly and simmer until mixture is thick enough to coat the back of a spoon (about 30 minutes).
2. Let cool before using. Store in a covered container in the refrigerator for up to 1 week.
Makes about 1 1/2 cups.
