For jalapeno cranberry just use jalapeno for the chipolte use everything but jalapeno. Prep chipolte by putting in med saucepan with water, bring to boild. reduce heat to med and simmer until chiles are tender, keeping them submerged. about 1-1.5 hours. Use water from the chile "soaking", Add to cranberrys and start to cook basic cranberry recipe. When cooked, thickened remove chiles seed and stem and then mince chile putting back into cranberry
