For puree:
Clean and trim cauliflower. Break into medium sized pieces and place in microwave safe bowl with cream and 1 tbsp butter. Microwave on high 10 minutes. Stir to coat. Microwave another 6-8 minutes on high until tender. Remove and blend with cheese, jalapeno, and garlic powder. Season generously with salt and pepper.
For cream cheese layer:
Put cream cheese in microwave safe bowl and microwave 30 seconds to soften. Add cheese and salsa mixing thoroughly. Should be spreadable.
To assemble:
In medium sized (8x8) dish, spread layer of puree with chicken. Spread the warm cream cheese on top. Layer colby jack cheese and jalapenos. Bake at 375 degrees for 20 minutes until cheese has melted. Finish under broiler to brown.
