Meatloaf with minced jalepenos, stuffed with cream cheese and cheddar cheese, and rolled in panko bread crumbs.
Remove the ribs and seeds from the jalepenos. Use one less or one more depending on your tolerance for heat. Add to ground turkey and season as you do your normal meatloaf - I use about a teaspoon of salt and a half a teaspoon of pepper. Mix until combined then flatten out into a baking sheet and spread the softened cream cheese across. Top with the shredded cheese then roll it up burrito style, tucking the ends in so the cheese mixture doesn't bubble out too much. Once it is rolled up, roll the loaf in panko and spray lightly with the spray butter. Bake 1 hour at 375.
