Roll pastry to 3-4 cm thick. Cut into 7cm rounds to line 18 tartlet moulds. Fill with a heaped teaspoon of jam in each.
Cream butter and sugar, add in vanilla essence and egg.
Fold in sifted flour with the milk.
Place one tablespoon of mixture on top of the jam.
Use any remaining pastry to make thin cross on the top.
Bake for 18-20 mins until risen and golden.
