Put sausage and all vegetables in a dutch oven and cook until vegetables are tender. Add chicken, salt, pepper and garlic and cook until chicken turns white.
Add thyme, majoram, bay leaves, and tomatoes and cook together for 10 minutes. Add cayenne (can add more after it cooks for a while) and more garlic. Cook for 5 minutes longer.
Add rice, water, and salt/pepper (to taste). Simmer for 15 minutes. Stir in shrimp, cover and cook for 10 minutes together.
This is even better left over. Just add water and stir and reheat.
