Suggest a better descriptionHeat olive oil in pot, cook sausage till browned and some fat rendered, then add onions and celery and cook till soft. Add rice, bay leaves, and all spices, cook for a few minutes. Add most of chicken stock and heat thru (add more if needed). Add tomato, shredded chicken, more spice to taste if needed. Tuck shrimp in making sure they are covered and let cook for just a few minutes till shrimp is cooked.
