Suggest a better descriptionBrown the sausage in large pot over medium heat (if using any chicken, it can be browned along with the sausage). Remove meat from pot but leave the drippings. Saute onions, celery, green pepper and garlic to until the onions are translucent in the reserved drippings. Return sausage mixture to pot. Add the stock and seasonings and bring to a boil. Add rice and return to a boil. Cover and reduce to simmer. Cook for a total of at least 25 min. After 10 min of cooking, remove cover and quickly turn mixture from top to bottom completely. Add green onions. Add shrimp for last 5 min. Chopped tomatoes can also be added if desired.
