This dish is satisfying and hot.
Heat oil in large skillet set over medium heat. Add peppers, onions, celery, and garlic; saute until onions become translucent. Add ham and sausages to pan and continue to cook for 5 minutes stirring occasionally. Add tomatoes, rice, hot sauce, cajun spice, salt and water. Bring mixture to a boil then reduce to a simmer. Continue to cook until rice is soft. Remove from heat and serve immediately.
