Suggest a better descriptioncombine all spice ingredients and set aside
in large dutch oven heat oil until shimmering. cook 1/3 thighs , stirring rarely until brown all over. repeat with remaining thighs. remove to bowl
remove and discard all but 1/4 cup fat from pot. add 1 tablespoon butter and melt over medium heat. add onions. cookings and stirring scraping up the brown bits.. cook until onions are browned. add sausage and 1/2 of spice mix. stir to coat.
cook and stir until meat is browned and onions tender.
add peppers, celery, garlic, salt and remaining spice mix. cook , scraping bottom until peppers are cooked
pour some of the chicken juices to loosen and scrape up bits.
add reserved chicken and any juices. and crushed tomatoes
stir and combine, bring to a boil
add rice, stock and bay leaves
stir to combine and bring to a boil.
cover with tight fitting lid and cook at 375 about 30 minutes until rice is cooked and liquid absorbed
remove from oven , stir in and submerge shrimp letting the residual heat cook the shrimp
### alternative way is to cook the rice separately with some of the spice mix,
stir cooked rice into cooked jambalaya at the last minute
rice is less mushy this way
