Melt butter, add sausage and ham sauté until browned. Sprinkle with flour cook for one minute. Add onions, garlic, celery and green pepper and cook for 5 minutes. Stir in tomatoes, spices, stock and rice. Boil covered and reduce heat until rice is done about 25 minutes. Add shrimp, chicken and heat through.
