If not using Vitamix:
1) Food process all veggies except squash and put them in preheated large saucepan with 1 Tb. olive oil. Add oregano and bay leaves and cook slowly, stirring occasionally, covered, for about 20 minutes, until vegetables are softened but not brown.
2) Add butternut squash to pan of vegetables. Add cans of tomatoes, water, salt and pepper.Bring to a boil, then simmer for about 30 minutes, or until squash is soft. Take pan off the heat, take out bay leaves. Let pan cool slightly, then blend with hand blender until smooth.
If using Vitamix:
1) Complete Step 1 of above. Meanwhile, steam cut butternut squash pieces for almost 20 minutes.
2) After veggies are softened, put 1 part veggies in VItamix, one part squash, and 1 can tomatoes with 1/2 cup water. Blend for 4-5 minutes.
