Suggest a better descriptionWhisk the jam, honey and brown sugar together and set aside.
Take the brie from its box and remove the wrapping, if any. Return the brie to the box, discarding the lid, and place the box on a baking sheet.
Cut off only the top portion of the rind. Using a spoon and/or butter knife scoop out the center of the brie round to within 3/4 of an inch of the sides and bottom, reserving the scooped out cheese.
Spread half the jam mixture over the bottom of the "hole," replace the scooped-out cheese, and top with the remaining jam mixture. Sprinkle the almonds or pecans over the top. Cover loosely with foil and bake in a preheated 350° oven just until melty, about 30 minutes. Remove the foil for the last 5 minutes of baking.
Transfer the brie, with the box, to a serving platter. Serve with a knife or spreader, fine crackers or thin-sliced baguette, and champagne.
* No wooden box? Place the brie in an oven-proof baking dish (a large glass or ceramic pie plate works well) and proceed with the recipe for baked brie, minus the baking sheet.
Time Saver Option:
Rather than scooping out the center of the brie, leave it whole. Spread the jam mixture over the top of the round, after removing the top rind, and bake as above. You'll only need about half the jam mixture.
Baked Brie with Honey Walnuts:
Combine 1/4 cup honey, 1/4 teaspoon nutmeg or 1/2 teaspoon crushed red pepper, and 3/4 cup coarsely chopped walnuts in a small saucepan and warm. Remove the top rind of the brie round and spread the honey-walnut mixture on top. Bake as above.
Savory Options:
After slicing the top of the rind off, top the brie with caramelized onions or chopped garlic, thyme and pepper. Bake as above and serve with sliced baguettes.
