A light and refreshing appetizer for the summer
Source: a recreation of a dish from Ippudo Japanese restau
-Heat sesame oil gently on low heat and add sesame seeds until just browned Do not burn seeds
-Add the orange juice and zest and let reduce by 1/2
-Add the Ponzu sauce (if no Ponzu sauce add more reduced orange and lemon juice and zest to soy sauce)
-Add the lime juice and garlic ginger paste and fish sauce if desired and cook gently reducing more
-Remove from heat and let cool while preparing the rest
-Slice the cucumber about 1/4 inch thick and scoop out a small bowl in the center with a strawberry huller but make sure not to go to deep so that the sauce does not get through
-Finely grate the carrot
-Slice the red bell pepper in thin slices and cut each slice in thirds
-Arrange the cucumber slices on a serving dish or tray.
-Using a small spoon, put some sauce in bowl in the middle of the cucumber slice
-Using the tip of a knife, put some finely grated carrot in the center
-Top with the thin slice of red bell pepper
-Garnish the top, to the side of the bell pepper slice garnish, with remaining sesame mixture
-If sauce is left it can be served along side with a small spoon to add an extra bit before eating
Can make without the carrot and red pepper slices. In that case, I accordian out the cucumber slices and then pour the sauce down the middle of the cucumber rows. Serve with a serving spatula so they can be put on a small plates to be eaten. It is less work, but they are not as easy to eat as finger food and the carrot and pepper add a nice flare
