saute onion with oil until yellow. set aside and cool.
Make a Japanese dressing with mixing all ingredients from fish stock, sugar, mirin, soy.
Drain Daikon through colander. mix with shallot.
in a bowl, mix all hamburger ingredients and mix well until stickly
take 1/4 into a ball and press to air out.
in medium heat, cook mince burger and dent the middle. turn out and put a lid on for 7 mins to steam.
add dressing and continue to cook, take a burger out and cook sauce thicker
on the top of burger, add shallot and radish and ginger and pour dressing
