Japanese Rolled Omelette
1/ In a bowl mix the eggs with the Dashi soup stock, the sugar and the soy sauce. Do not mix it too strongly.
2/ In a rectangular frying pan add the oil and turn the heat on. To check teh frying pan heat drop a little egg mix (drops).
3/ Pour half of the mix in the frying pan and let it cook evenly while stirring with chopsticks.
4/ When it's cooked to your taste fold from the bottom of the frying pan toward the handle using chopsticks or a spatula (easier at the beginning)
5/ Push the folded omelette to the bottom of the frying pan, add some oil using kitchen paper and pour the remaining egg mix (make it even on the pan even beneath the already folded part).
6/ Repeat the cooking while stirring and fold again starting from the previously folded parttoward the handle of the pan.
