Stir salt, soy sauce and sugar into stock. Then stir in eggs.
Strain the mixture through a sieve.
Season mushroom with sake and soy sauce then divide between custard cups and pour eggs over.
Place in steamer for 2-3 minutes then remove lid and cook for 20 minutes.
It's cooked when clear liquid comes out when cut
