Suggest a better descriptionBring 1L of water to the boil in a saucepan. Pour 150ml of boiling water over the miso and stir until dissolved, then set aside.
Meanwhile, bring another large pan of salted water to the boil, add noodles and cook according to instructions or until tender.
Drain the noodles in a colander. Rinse under cold running water then drain again.
Ad the sake or sherry and soy sauce to the pan of boiling water. Boil gently for 3 minutes until the alcohol has evaporated, reduce heat and stir in the miso mixture. Add the asparagus or mangetouts, mushrooms, carrot and spring onions and simmer for 2 minutes until the vegetables are just tender. Season to taste.
Divide noodles among the four bowls and pour the soup over the top. Serve immediately sprinkled with chilli flakes.
