In a large pot over medium-high heat, add 1 tablespoon peanut oil.
Cook tofu - set aside
pour 1 a bit more oil.
Add celery, cardamon, ginger, cumin, star anise, coriander, and dried chilis.
Add carrots.
Add curry powder and asafetida
Add tomato paste
water
potatoes
3-4 tablespoons soy sauce
1/2 apple grated.
maple syrup
Bay leaf
ROUX
butter
all-purpose flour
Spices: turmeric, chili powder?/garam masala, asafetida,
cumin powder,
CINNAMON
instant coffee... or maybe just allspice.
mix into curry
add more honey/maple syrup.
Add salt and pepper
fukujinzuke pickles!
