Suggest a better description1. Bring water to a boil with the olive oil and salt. Stir in the jasmine rice and return to a boil. Reduce heat and simmer covered for 15-17 minutes.
2.Stir in dried cherries, peanuts and let stand, covered for ten minutes. Sprinkle with toasted coconut.
To Toast Coconut: Spread in a pan and bake at 350 for 5-10 minutes or until golden brown. Stir frequently.
