Brown hamburger in oil
Add finely chopped chili peppers
Heat 1/2 inch of oil in skillet
Heat Enchilada sauce in another skillet
Dip corn tortillas in oil for 3 seconds on each side
Then dip the tortillas in sauce for 3 seconds on each side
Fill tortillas with hamburger mixture and grated cheese
Roll and place seam-side down on baking sheet
Repeat for remaining tortillas
Spread remaining sauce over the top
Spread remaining cheese
Bake at 400°F for 12 minutes
Best served with a Green salad and Dos Equis XX beer!
