Simple, homemade version of the holiday classic.
Rinse cranberries well.
Place cranberries, juice, water and lemon zest in a medium pot.
Bring to a simmer, cover allowing for steam to escape.
Cook berries about 10 minutes, you should here them start popping when they are close to done.
Once the berries are able to be mashed easily remove from heat.
The easiest way to do this step is to use a food mill with it's finest disc in place although a fine mesh strainer and a spoon work (but takes a very long time!).
Place berries in the mill, mill until only the skins remain in the mill.
Be sure to scrape all the pulp from the underside of the mill.
Most of the cooking liquid should have evaporated in the cooking process, if there is a slight bit leftover it is still fine to mill the berries into the juice, it will only add flavor.
Return berry pulp to the stove, adding the sugar, cinnamon and allspice.
Over medium heat, stir until sugar is dissolved.
