Set CrockPot on low. Slice onions thickly and lay on bottom of pot. Add Broth, Soy, Worcestershire, garlic, dollop mustard in the center. Salt and Pepper roast and set into pot. Liquid should cover the meat. Cover and cook low for 8 -10 hours. Remove beef and separate with two forks. Remove fat from liquid return to pot. Add meat continue for one hour more.
Toast bread, melt cheese and add meat to sandwich. Return to oven and warm together, serve wtih sauce on the side.
