This homemade jerk seasoning packs a surprising amount of heat and pairs perfectly with raisins!
Preheat oven to 350 degree F.
Jerk Seasoning:
Mix the brown sugar, cumin, cinnamon, cloves, red pepper flakes, allspice, salt and pepper together in a bowl or zip-lock bag. You will have much more than you'll need for this recipe, so save it, use it, enjoy it!
Rinse chicken breasts and pat dry. Sprinkle with about 1/2 teaspoon of the jerk seasoning over each breast and on both sides.
Heat the extra-virgin olive oil in a pan until it's good and hot. Sear the chicken breasts on the top side only for about 1-2 minutes or until a nice golden crust has formed.
Place the chicken breasts seared side up on a large piece of tinfoil, top with approximately 1/4 to 1/2 cup of raisins on each, add just a sprinkle more of the jerk seasoning and wrap the tinfoil up into a bag.
Place the chicken breasts in the oven for 20 minutes or until the internal temperature reaches 160 degrees F. Remove from the oven and let rest for ten minutes.
