seasoned pork chops

Season pork chops with jerk seasoning, lime juice, and 1/4 tsp of salt. Marinate for 30 minutes. Cook pork chops under broiler or in the oven at 450 til cooked through. Cook spinach on the stove in 2 Tbsp of water until just starting to wilt. About 1 minute. Remove from heat and transfer spinach to a bowl. Add radishes, tomatoes, lemon juice, and pepper. Allow pork chops to rest 10 minutes before serving on the wilted spinach salad.
Makes 4 servings.
