Authentic Texas Chili
Boil the chili pods covered in a pot with 1 quart of water for 15 minutes. Remove pods and save the water they have boiled in. Remove pods' stems, seeds, and slip off skins. Saute' the beef and garlic until the meat is thoroughly cooked, about 40 minutes, with the comino and chili powder. Add the onions and cook 10 minutes, add tomatoes mixed with the cornmeal, flour, and chopped pods. Cook another 5 minutes. Add the chili water mixed with enough water to make 2 quarts. Simmer for about 45 minutes or until all the flavors are well blended.
