Yuan family recipe for Jiao Zi.
1) Mix well first 3 ingredients, then mix in hot oil and let set 15 minutes.
2) Mix in green onions and spinach.
3) Wrap in wrappers, sealing with water. Ready to store or cook.
Cooking Jiao-zi
To boil: Drop 20-30 jiao-zi in large pot of boiling water, when water returns to a boil add 1 cup cold water. Repeat this process one more time. Cooking time usually about 10-15 minutes.
To fry-steam: Lightly coat with flour. Fry briefly in oiled non-stick pan. Add a few tablespoons water and cover cooking about 5 minutes. Turn over
Storing Jiao-zi
To freeze/store: Lightly coat with cornstarch and freeze individually on a cookie sheet, then store in larger container together.
