Whole 30 smoky, spicy tacos
Heat the olive oil in a Dutch oven or heavy skillet over medium high heat. Add the beef and sear on all sides, turning the meat to brown evenly. Place the beef in a 5 qt. slow cooker.
In the Dutch oven or skillet, cook the dried chiles over medium high heat, stirring frequently, until slightly darkened and fragrant, 3-5 minutes (don't let them smoke). Add 1/2 cup of the broth, the tomatoes, and the cayenne and bring to a boil. Reduce the heat to medium low and simmer, uncovered for 5-6 minutes. Transfer to a blender and puree until smooth (be careful, as at the mixture will be hot).
Add the p creed tomato mixture to the slow cooker along with the remaining 1//2 cup broth, the onion, garlic, canned chiles, lime juice, bay leaves, vinegar cumin, salt, oregano, fish sauce, granulated garlic, crushed cloves, smoked paprika, red pepper flakes, and black pepper. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and falls apart when shredded with a fork.
Turn off the slow cooker and discard the bay leaves. Use two forks to shred the meat in the cooker. Season with salt. Serve on thinly sliced jicama.
