So whenever I make pav bhaji, I make large qty of it so I can store 1/2 in the freezer for another family meal.
*I toss largely cut florets from 2 Cauliflowers, 2 peeled and cubed large Eggplants, 5-6 peeled and coarsely chopped carrots, 1 diced Red Bell Pepper, 1 diced Yellow Bell Pepper, 1 medium sized peeled and cubed Sweet Potato, salt and very little water in a very large pressure cooker. Be careful with the water, the veggies release a lot of water. Pressure cook for 20-30 mins.
*Saute finely chopped green chilis (I do 1 jalapeño with seeds because of the kids), garlic (8-12 cloves, we love garlic) and diced onion in an instant pot (This is the only really deep pot I have to add the other veggies in later.) Add, salt, 2-3 spoons full dhana/jeera, 1 spoon full tumeric powder, 1/2 spoon full garam masala. I then add 2 chopped Roma tomatoes and 3 pulped tomatoes that I make in the chopper to the sauté. Squeeze 1 whole lime to the gravy.
*Please open pressure cooker carefully after it’s cooled down. If there is too much water, try to drain it. Mash everything with a masher. Once it all like mashed potato, add it to the gravy and mix. Taste it. Add salt or more masala if needed. Add chopped cilantro.
*On the side, boil frozen sweet peas. Add it to the Pav Bhaji or don’t.
*I use French Brioche buns for the kids. We have diced onions with chopped cilantro drizzled with lime, nylon sev, and maybe diced tomatoes to top the Bhaji.
*Freeze 1/2 or even in 2 container for 2 more meals for later. I put it in the fridge the night before we are going to eat it again. I also warm it up in a pot with a little oil over the stove. (No microwave).
