Bring water to a boil. Slowly whisk in grits and salt. Reduce heat and cover and simmer for 5 minutes, stirring occasionally.
In a large bowl, combine grits, sausage and 1/2 cup cheese. Beat together eggs and milk; stir into mixture. Add butter and salt and pepper.
Transfer to. A greased 13x9 pan. Bake uncovered at 350 for 1 hour. Sprinkle with remaining cheese and bake an additional 15 minutes.
