Suggest a better descriptionMelt 1 tbsp butter in skillet. Add corn, salt and pepper. Cook about 5 minutes until golden brown. Pour into mixing bowl and let cool.
Melt remaining butter in skillet. Add onion, bell pepper and cook stirring often until onions are wilted. Add green onions, jalapeño and garlic and cook additional 2 minutes.
Heat oven to 350. Add mayo, 1 cup of cheese and cayenne to corn mixture. Mich well. Pout into 8x8 baking dish sprayed with cooking spray. T opwith remaining cheese. Bake 10-12 minutes.
