Great when fresh seafood is used
Heat oven to 350. Coat 3 1/2 quart dish with cooking spray.
Heat oil in large nonstick skillet on medium-high heat. Add scallops, shrimp, salt and pepper. Cook for 2 minutes each side. Remove to plate. (you may want to "sear" the scallops before adding the shrimp).
Blend half and half and cornstarch. Bring to a simmer in skillet. Simmer 1 minute. Take off heat and stir in clams and juices, 1/2 cup of cheese, tarragon, cayenne and sprinkle salt. Add cooked shrimp and scallops and toss with fettucinne.
Spoon in prepared dish and sprinkle with remaining 6 tbsp cheese.
Bake for 20 minutes.
