Bring all ingredients, particularly the cream cheese, to room temperature.
Set rack in center of oven.
Preheat oven to 350 degrees 20 minutes before baking.
Make Graham Cracker Crust for 10-inch springform pan. Set pan on rimmed baking sheet to catch leeks.
Filling: Place cream cheese and sugar in a 4- to 5-quart mixing bowl and beat at high speed with an electric mixer until completely smooth.
Beat in the sour cream and cream, then the eggs, two at a time, and finally the vanilla. Continue to beat, scraping the sides of the bowl with a rubber spatula, until mixture is completely smooth.
Pour into prepared pan and bake in preheated oven for 1 hour (1 hour and 10 minutes if your oven is poorly insulated or might conceivably be slow.) Turn off oven but leave cheese cake inside for 2 hours longer, during which time it will finish baking. Avoid opening the oven door during this period. Remove cheesecake from oven, place on a rack, and let stand at room temperature for 3 hours, or until completely cooled. (Never put a warm cheesecake in the refrigerator; steam may condense inside it and turn it watery.) Refrigerate cooled cheese cake for 12 hour or longer. Just before serving, carefully remove the rim of the pan and set the cheesecake on a serving platter.
