This meat and cheese layered nacho recipe is perfect for a football party appetizer or even a meal by itself. Easy to follow directions make this a great choice when trying something new and allowes you to customize dish to your own liking.
Pre-heat oven to 350.
In a medium skillet brown ground beef. While beef is cooking open and drain pinto beans, black beans, corn, and diced tomatoes with green chilies. Once beef is browned drain excessive grease and add taco seasoning and stir. Do not add water to the taco seasoning. Add pinto beans, black beans, corn, and about 3/4 of the can of diced tomatoes and chilies.
Layer tortilla chips in the bottom of a large casserole dish. Spread meat mixture evenly on top of tortilla chips. Top with 3-4 cups of pepper jack cheese. Sprinkle remaining chilies and sliced olives on top of cheese. Chop cilantro and sprinkle evenly on top of dish. Place in oven for 15-20 min.
