Mild white chili
Heat oil in a large soup pot. Add onion and salt lightly to prevent burning. Cook until transparent. Add garlic, chilis, cumin, salt and cayenne, and saute 2 to 3 minutes. Add broth, chicken, beans and hominy. Simmer 20 to 30 minutes, stirring often. Serve garnished with cheese.
Buy whole canned chilis and dice them yourself, rather than buying diced canned chilis. The diced chilis often are not adequately peeled, and you are likely to get hard pieces of peel in the soup.
