These are easy & tasty potato pancakes. They fry perfectly without falling apart when turning to fry other side of them...
1. Boil cut up potatoes in water till done. Drain and cool potatoes. Mash the potatoes then add 1 egg, 1 medium diced onions and 1/2 cup half & half. Salt & pepper. lastly add the flour and mix well. Fry spoonfuls of batter in hot skillet with olive oil. Fry on one side and wait till free enough to loosen each pancake from the skillet, continue cooking on that side side till done flip over and do the same thing.
Tips
TIP*** To reheat put on rack in 200 to 250 degree oven for 20 minutes they will stay crunchy on the outside and done on inside.
