Heat toasted sesame oil in a hot wok and add ginger and garlic. Cook for 1-2 minutes.
Add yellow pepper and cook for 2 minutes.
Add carrots and green onions and cook for 2 minutes.
Add rice wine vinegar, hoisin sauce, ponzu sauce and soy sauce and stir well to combine flavors. Cook for 1-2 minutes.
Add red and green cabbage and bean sprouts. Toss well to coat and cook for 5-6 minutes.
Add mushrooms and toss well. Remove from heat and allow to cool before making egg rolls.
Preheat oven to 400 degrees and spray a cookie sheet with a non-stick baking spray.
To form egg rolls, place a square egg roll wrapper on counter turned slightly so there is a point at the top and a point at the bottom.
Fill egg roll wrapper with about 2 tablespoons of the filling mixture. Fold the bottom point up towards the center of the wrapper and fold in the left and right points to the middle of the wrapper. Partially roll the egg roll up towards the top point. Using a little water, moisten the top point to make it a little tacky and finish rolling the egg roll up to the top point.
Place the egg roll, rolled point side down, onto the greased cookie sheet and bake in a 400 degree oven for 10-12 minutes.
Allow to cool slightly before serving. Serve with duck sauce, hot chinese mustard, sriracha sauce or any other of your favorite dipping sauces.
