Center an oven rack
preheat to 400 degrees F
grease or line w/cups a 12 muffin tin
In a large bowl whisk together first four ingredients: flour, baking powder, salt and nutmeg if using
In second bowl whisk together eggs, milk, sugar, butter and vanilla
Ad the wet to the dry and mix together with a few light strokes, just until the dry ingredients are moistened. Do not overmix, the batter should not be smooth.
Divide among cups, bake until a toothpick comes out clean. Probably 12 to 15 minutes.
Christine Benner: I use 6 tablespoons of butter and if I use buttermilk instead of milk/cream, i add 1/2 tsp of baking soda.
