A delicous, spicy quick bread. This makes 2 loaves and 2 or 3 muffins.
Mix all ingredients and pour into two 5 1/5 inch by 9 inch loaf pans. Dip out enough to make 3 or 4 muffins. This allows the loaves to cook evenly without over-browning the outside or under-cooking the inside.
Cook in a 325(F) oven 40 - 60 minutes.
Toasting the nuts before adding them to the batter makes them stay crunchy and increases their flavor.
