I cook these wings inside using a cast iron skillet or outside(which my wife prefers) using a deep fryer...these are awesome!
Add the flour and all dry spices too a paper bag.I usually put the paper bag inside of a plastic bag in case of breakage. Fold wings,i like using whole wings,i think that they fry up better. Season wings with same seasoning that was used in flower,i a little heavy handed on the pepper ,but season too your taste.Let the wings sit for 10 mins, meanwhile ,in a cast iron skillet bring oil to a 350degrees MOTE: temperature is paramount when frying anything so,make sure you keep an eye on your temp. take 4 wings and place in bag, shake making sure that they are well covered, take them out of the bag and let sit for about 3-4 mins. Place wings in oil...i use the 3-4 mins per side-method depending on how big the wings are.Cook until golden brown ,there will be some residual cooking after removing wings so let them sit for about 5 mins after removing from oil. Make sure too have some kosher salt on hand ...always season fried foods the min that you remove them from the oil. I like too serve these with Pork and Beans and rice..... I'm an ol' southern boy ! I think that you will enjoy these
keep an eye on your frying temp!
