First of all, see my recipe for "frying" bacon in the oven, and prepare as much bacon as you think you will need.
I also like to use Great Harvest Virginia Savory bread, but use whatever you like.
I don't have a recipe / measurements for my garlic mayo. I use a little bowl and put in as much mayo as I think we will use, and add minced garlic. I really like garlic, so maybe 1/2 cup of mayo and 1-2 tablespoons of minced garlic, for several sandwiches. Make it to your taste.
For the avocado, I like it smashed up rather than slices. It seems like the slices always slide off the sandwich. So, I cut my avocados and mash them with a fork - set aside.
So, bake my bacon and drain it. Then I toast my bread. When its's done, I lay a piece of sharp cheddar on the toast so it gets soft. Then I smear some avocado on top of the cheese. Add the bacon, lettuce, tomato, and then slather the garlic mayo on the top piece of bread.
It's good, too, if you have some nice big lettuce pieces and you make bacon, avocado, tomato, garlic mayo, cheddar roll ups!
