Perfect on spinach salad with eggs, bacon, and hearts of palm
Fry bacon and set aside for salad. Add drippings to a small measuring cup, adding a bit of olive oil if drippings don't equal 2 tablespoons. Combine drippings with remaining ingredients and refrigerate until ready to serve.
Make spinach salad of your choice. When ready to eat, heat prepared dressing for 30 seconds or until sizzling. Poor over salad.
