Italian meatballs that may be made ahead, individually frozen and prepared quickly for endless possibilities for lunch or dinner.
Place the ground meat (may be any combination of beef, lamb, pork, or turkey) in a large pasta bowl. This makes it easier for mixing. Set the meat aside.
In a large skillet heat 1 to 1 1/2 tablespoons oil and cook the onion until soft and lightly browned, about 10 minutes. Set aside to cool. Finely chop the cloves of garlic and using the salt make a paste by rubbing and scraping the flat side of a chef knife over the garlic and salt a few times.
In a smaller bowl, lightly beat the egg and yolks with the wine (broth, milk or water may be used in place of the wine). Add the freshly ground pepper, garlic paste and chopped herbs to the egg mixture. Pour the egg mixture over the soft breadcrumbs and stir well to moisten all the bread. Add the sauteed onions and stir. You will have a well seasoned moistened bread which smells divine. Pour the moistened bread over the ground meat, sprinkle the grated Parmesan cheese and mix this well without over mixing it. The old timers in Italy say that over mixing makes a tough meatball.
As a guide, I use a tablespoon and measure 3 tablespoons of meat mixture into the palm of one hand. Using both hands, shape that into an egg shape. Continue shaping the remaining meat mixture in the same way, keeping the meatballs the same size for uniform cooking. This will make about 30 meatballs.
In a large skillet, heat the remaining oil over medium low heat. Place the meatballs in the oil, fry until brown on all sides and cooked through (turning every 5 minutes or so) about 20-25 minutes total.
Meatballs may be prepared in advance and heated in tomato sauce when needed.
This recipe may be easily cut in half or doubled. Leftover meatballs may be individually frozen and placed in freezer bags for future use.
