This is my absolute favorite green salad. Marinating the kale softens it without compromising its hearty, robust flavor, the blueberries add a touch of sweetness, and the walnuts give it just the right amount of crunch. Tip: for a delicious, super-healthy one-dish meal, add some smoked tuna or salmon.
In a large ziplock bag, combine olive oil, lemon juice, water, garlic powder, salt, and pepper. Add kale and turn bag to coat evenly. Refrigerate overnight or at least 6 hourse. Drain kale, discarding excess marinade, and place in large bowl. Add blueberries and walnuts. Toss gently and serve immediately.
