Jackfruit, primarily fiber, is rich in B-complex vitamins and Vitamin C. An entire can is under 150 calories. A can yields enough for 4 generous seervings. It shreds like chicken or pork and retains the flavour of whatever it is cooked in. It can also be chopped creating a ground meat appearance that makes an excellent taco filling. Can also be used for 'corned beef'.
Place all ingredients in a small crockpot. Cook on low for 4-5 hours, stirring at least twice.
Remove from the crockpot and use forks to shred the jackfruit. The seeds of the jackfruit, which look like beans, may be smashed with a fork.
