Stew in peanut sauce
1. In a pressure cooker , add beef oxtail and tripe then add sufficient amount of water to cover it and bring to a boil for 30 mins or until tender. Set aside.
2. In a separate cooking pan, Sautée garlic, onion for a minute. Add the tender meat , chilli flakes continue cooking for another 5 minutes .
3. Add the Kare Kare mix and beef broth simmer for 5 minutes and add vegetables .
4. Serve with cooked shrimp paste .
