Cream shortening and sugars in a large mixing bowl. Add eggs and peanut butter; beat well. Gradually add flour, salt, and baking soda. Add vanilla. Stir in oats and chocolate chips.
Drop by heaping teaspoon onto cookie sheet. Bake in preheated 350 degrree oven for 12-14 minutes.
Notes: I have substituted butter for the shortening and they turned out fine. The recipe is from Kari Hatfield, ACU theatre professor, and many a theatre student has feasted on these yummy cookies!
