This is a family favorite, easy to do, and we hope you enjoy too.
Preheat oven to 500. That's not a typo. I actually MEAN 500.
*Mix pepper, paprika, salt, garlic powder, onion powder, cayenne pepper, coriander, and dill weed in a bowl and set aside.
(Or, go the easy route, and just use pre-made Montreal steak rub. I just like making it to my own taste.)
*While oven is heating to temp, heat oil in a skillet on medium heat and sautee mushrooms, garlic and onion.
*Rub London broil with mustard.
*After the mustard, rub in seasonings you mixed in bowl on the meat, on top of the mustard.
*Put meat on broiler pan
*Put the sautéed onion, garlic and mushroom mixture right on top of London broil.
* Put in preheated oven, quickly shut the door, and IMMEDIATELY turn down to 230 degrees.
*Let cook for 45 minutes (For rare... longer for medium or well done.)
DO NOT open the oven and peek. It will let the heat out too fast.
