Preheat oen to 375* and roast garlic until tender, about five minutes.
Transfer to medium saucepan and add next six ingredients. bring to boil.
Reduce heat and simmer for ten minutes.
Transfer to a blender and puree. Strain through fine sieve (I don't) into saucepan.
Add cream and simmer until thickened, about five minutes.
Season with salt.
Can be cooled and refrigerated up to two days.
I have substituted fat free half and half for cream and it turned out fine.
